Hydrophilic head and hydrophobic tails
A phospholipid is a lipid with a charged or polar head group and hydrophobic fatty acid tails. Because it is amphipathic, it self-assembles in water so that heads face the aqueous environment and tails face inward. This behavior creates the phospholipid bilayer that forms the basic structure of cell membranes.
